Shimp and veggies in a thai curry sauce with couscous

Recipe Ingredients for Thai curry shimp

1 cup couscous
1 lb shrimp
1 red bell pepper
4 scallions
1 cup coconut milk, unsweetened
2 tablespoons curry paste
2 tablespoons olive oil
1 cups chicken broth
1/2 lbs mushrooms
12 oz peas

Recipe Directions for Thai curry shimp

  1. Couscous: heat 1 cups chicken broth and 1 tablespoon butter until boiling; add 1 cup couscous, stir, and turn off heat. Cover and let sit for 5 minutes. Take off lid, fluff couscous with fork, add 1 tablespoon lime juice and a spinkle of basil and stir.

  2. Shrimp: heat 1-2 tablespoons oil in a large skillet. Put shrimp in and cook until opage.

  3. Heat 1-2 tablespoons olive oil in a large skillet. Put mushrooms in (sliced thin) and cook until nearly done.

  4. Chop a 1-inch piece of ginger root, and chop the red bell pepper and put each into the skillet with the mushrooms and cook.

  5. Cut the scallions into ~1 inch pieces and throw in the skillet.

  6. When mushrooms are done, stir in the curry paste and coconut milk. Bring to a simmer and let simmer.

  7. Stir in the peas and the shrimp. Adjust seasoning to taste. Heat until everything is warm.

  8. Serve over a bed of couscous.
