Roasted Pork with Thai curry sauce

Recipe Ingredients for Thai Curry Coconut Pork

2 lb boston butt
1/4 cup green curry paste
1/8 cup honey
2 tsp cinnamon
2 tsp garlic powder
1 tbsp salt
1 cup lite coconut milk

Recipe Directions for Thai Curry Coconut Pork

  1. Make a paste of the curry paste, cinnamon, honey, garlic, and salt

  2. Rub all over pork

  3. Wrap pork in foil (like a parcel) leave a steam vent in the top

  4. Bake at 375 degrees for 3 hours

  5. Drain sauce and juices into a saucepan

  6. add chopped peppers and onions and stir in coconut milk

  7. Reduce until thick in consistency
