A mild and easy Thai recipe.. you can add more kick with spicier curry or other spices.

Recipe Ingredients for Thai curry chicken

1/2 cup uncooked rice
1 chicken breast
1 tablespoon butter
1 clove garlic, minced
1 teaspoon curry powder
1/4 teaspoon ground ginger
3 tablespoons raisins
1 cup chopped apple
1 teaspoon chicken bouillon
1/4 cup plain nonfat yogurt
2 teaspoons all purpose flour
2 tablespoons green onion, sliced
1 teaspoon cayenne
1/4 cup coconut milk

Recipe Directions for Thai curry chicken

  1. Cook rice according to directions.

  2. While rice cooks, cut onion into slices, and chicken into cubes.

  3. Heat butter, garlic, curry powder, and ginger in medium skillet over medium heat. Add chicken; cook and stir 2 minutes. Add onions, raisins, 3/4 cup chopped apple; cook and stir 3 minutes. Stir in chicken bouillon and coconut milk. Reduce heat to low and simmer 2-3 minutes.

  4. Combine yogurt and flour in small bowl. Stir several tablespoons liquid from skillet into flour mixture. Stir flour mixture back into the skillet. Cook and stir just until mixture starts to boil.

  5. Serve chicken curry over rice; garnish with remaining apple and green onion.
