A simple Thai Curry Chicken recipe

Recipe Ingredients for Thai Curry Chicken

3 lb chicken
1 cup of soy milk
400 ml coconut milk
5 tbs curry
1 tbs cinnamon
2 tbs soy sauce
3 tbs olive oil
2 large onions
5 cloves garlic
1/2 cup broccoli
1/2 cup carrots
1/2 cup cauliflower
2 small red potatoes
1/4 cup flour
6 cups rice

Recipe Directions for Thai Curry Chicken

  1. Heat up a pan of olive oil and cook half of the onions, all the broccoli, carrots and cauliflower.

  2. Set vegetable aside.

  3. In a bowl mix the soy milk, coconut milk, curry, cinnamon, soy sauce, garlic and flower. Set this aside

  4. Heat up the pan with remaining olive oil. Add the onions and cook until caramelized. Add in the chicken and cook until meat is no longer red. Add in vegetables and the coconut sauce mixture. Cover pan and simmer on low to medium heat for 10-15 minutes.

  5. Serve with rice.
