Recipe Ingredients for Thai Curry Chicken Lettuce Wraps

1 tablespoon vegetable oil
1 lb ground chicken
1/2 cup shallots
2 medium carrots
1/2 english cucumber
1 large red bell pepper
3 tbsp mint
3 tbsp cilantro
3 tbsp basil
3/4 cup coconut milk
1 tbsp curry paste
1 tbsp fish sauce
1 tbsp soy sauce
1 tsp chili paste
8 butter lettuce leaves

Recipe Directions for Thai Curry Chicken Lettuce Wraps

  1. Heat the vegetable oil in a non stick skillet over medium high heat. Add the ground chicken and cook until no longer pink. Add the coconut milk, curry paste, fish sauce, soy sauce, and chili paste and mix until well blended. Turn off the heat and set aside.

  2. Seed and dice the english cucumber and red bell pepper and set aside in a bowl.

  3. Peel the carrots and shred.

  4. Finely chop the herbs.

  5. Top each lettuce leaf with 1/4 cup of the chicken mixture, then sprinkle with the cucumber, bell pepper, carrot, and herbs.
