2 cup Lentils, Mature Seeds
3 1tsp Olive Oil
2 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
2 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 large Onions
5 cup cherry tomatoes Tomatoes, Red, Ripe
8 oz Mushrooms
4 tbsp Masaman Curry Paste
2 tbsp Ground Ginger
2 tbsp Garlic Paste
2 tsp Cumin
2 tbsp Lemon Juice, Canned Or Bottled
14 fl oz Organic Premium

Recipe Directions for Thai curried Lentils and tomatoes

  1. Cook lentils till tender

  2. chop all veggies & add to heated oil in lg pot, add spices & cook till veggies are tender & tomatoes give off their juices.

  3. Add coconut milk & heat through

  4. serve w/ rice or couscous
