1 cup rice vinegar
1 teaspoon lime zest
1/4 teaspoon Tabasco sauce
2 tablespoons Splenda
2 large cucumber
1/4 cup cilantro leaves
1 tablespoon peanuts, chopped

Recipe Directions for Thai Cucumber Salad

  1. Combine vinegar, lime zest, Tabasco, Splenda, cucumber and cilantro leaves in a glass or stainless steal bowl.

  2. Marinate for 2 hours. Remove from liquid and sprinkle with chopped peanuts.
