This should probably be halved as I can't eat 8 servings before it goes bad!

Recipe Ingredients for Thai Cucumber Salad

1/2 red onion
1 1/2 tbsp jalapeno, diced
3 cucumbers
3 garlic cloves
2 tbsp fresh ginger
1/2 cup rice vinegar
1/2 tsp salt
1/4 tsp pepper
2 tbsp splenda

Recipe Directions for Thai Cucumber Salad

  1. Slice cucumber paper thin and dice the jalapeno and onion.

  2. Mix garlic, ginger, rice vinegar and spices in separate bowl.

  3. Add together and chill for 1 hour.
