Thai Corn and Potato Soup Recipe

From Vegan Express with my changes. Can use low fat coconut milk.

Recipe Ingredients for Thai Corn and Potato Soup

1 tbsp olive oil
2 garlic cloves, minced
4 scallions, thinly sliced
1 medium red bell pepper, seeded, chopped
2 potatoes, pared, cut in small pieces
3 cups coconut milk
2 cups rice milk
16 oz frozen corn
2 tsp curry powder
1/4 tsp Thai red curry paste
1/2 tsp salt (optional)
1/2 cup cilantro, minced (optional)

Recipe Directions for Thai Corn and Potato Soup

  1. Heat olive oil in soup pot.

  2. Add garlic, white parts of cut scallions, and the bell pepper.

  3. Saute over medium-low heat until softened and golden, about 3 minutes.

  4. Add coconut milk, rice milk, corn, potatoes, curry powder, Thai red curry paste, and green parts of the scallions.

  5. Stir out any lumps.

  6. Heat to a rapid simmer, then lower heat. Cover and simmer for about 20 minutes. Add salt (optional).

  7. Top with cilantro when serving (optional).
