Also use 1 inch galangal, thinly sliced, 4 stalks lemon grass, bruised and chopped, 10 kaffir lime [or maybe lemon] leaves, torn to simmer in the coconut milk & water ... then strain out and discard before adding other ingredients. Add green onion, red pepper and boiled & de-veined shrimp a few minutes before serving. For curry, use Thai Red Curry if available. (This is slightly modified from a recipe on allrecipes.com.)

Recipe Ingredients for Thai Coconut Shrimp Soup

21 ounces coconut milk
1 tsp curry
1/4 cup lime juice
1/2 pounds shrimp
3/4 pounds shiitake mushrooms
3 tbls fish sauce
1/4 cup brown sugar
2 cups water
3 tbls green onion
1 tsp red pepper flakes

Recipe Directions for Thai Coconut Shrimp Soup

  1. Cook and clean shrimp, then set aside

  2. In separate pot, add coconut milk & water, bring to a boil.

  3. Add galangal, lemon grass & lime leaves. Simmer 10 minutes.

  4. Strain, then add shiitake mushrooms (sliced) and simmer five minutes.

  5. Add lime sauce, fish sauce, curry and brown sugar.

  6. Just before serving, reheat soup to near boiling, add shrimp and garnish with red pepper and green onion.
