2 cup Garden Vegetable Broth
2 clove Garlic
2 tbsp Soy Sauce
0.5 1tsp Oil, Sesame
1 pepper Peppers, Jalapeno
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 tbsp Lemon Grass (Citronella)
2 small (5-1/2" long) Carrots
1 head Cabbage, Chinese (Pak-choi)
1 of a head Bok Choy
1 cup pieces Mushrooms, Shiitake
2 cup Spinach
0.25 cup, chopped Onions, Spring Or Scallions
0.5 cup Cilantro
1 tbsp Curry Powder

Recipe Directions for Thai Coconut Curry Soup

  1. Combine all ingredients in a large stock pot or CrockPot

  2. SImmer on medium for 1-2 hours if using a stock pot.

  3. Cook on high for 4-6 hours if using a CrockPot.
