Low-fat low-carb chicken coconut soup

Recipe Ingredients for Thai Coconut Chicken soup

8 c chicken stock
2 c water
1 jalapeņo pepper
3 cloves garlic, chopped
1 tablespoon grated ginger
2 teaspoon grated lime zest
1/2 cup fresh lime juice
2 c. crimini mushrooms, sliced
12 oz. boneless, skinless chicken breasts
14 oz lite coconut milk
3 cups frozen spinach
3 c. bok choy
1/4 c fresh cilantro
1/4 c. fresh basil
1 med. onion
1 med. eggplant, cubed

Recipe Directions for Thai Coconut Chicken soup

  1. Combine broth, water, pepper, garlic, ginger, lime zest, lime juice, and bok choy, and bring to a simmer.

  2. Add mushrooms to broth simmer 3 minutes more.

  3. Add chicken and coconut milk and simmer, stirring, until chicken is just cooked, about 3 minutes.

  4. Stir in spinach until it begins to wilt, about 1 minute.

  5. Add chopped cilantro and basil.

  6. Ladle soup into bowls and garnish with sprigs of cilantro and slices of pepper.
