Recipe Ingredients for Thai Coconut Chicken

6 oz Lite Coconut Milk
1 tsp coconut oil
1 garlic clove
1 oz. scallions
10 oz Fresh Boneless Skinless Chicken Breasts
8 oz Straw Mushrooms
2 cup, chopped Broccoli
1 medium raw Bell Pepper Red
1 container MINUTE Ready to Serve Brown
1/4 cup Water Chestnuts (Sliced)
1/2 cup (1/2" slices) Bamboo Shoots

Recipe Directions for Thai Coconut Chicken

cut chicken breasts into strips 1x1/2". add to pan with coconut oil & sauté. add pepper, garlic & brown. reduce to simmer. drain chicken & place aside. in saucepan, combine peppers, shoots, chestnuts & broccoli to 1 tsp coconut oil - stir fry for 5 minutes, stirring constantly. reduce to simmer, add coconut milk, mushrooms & scallions - stir. add chicken. cover & simmer for 5 minutes. place rice into microwave for 60 seconds. divide rice onto 2 plates & serve cocnut chicken over.
