125 grams Chicken, Breast, Meat Only
50 grams Peppers, Sweet, Red
40 grams Carrots
25 1/2 grams Onions
100 grams Onions
1 clove Garlic
1 tbsp Peanut Butter, Smooth Style
15 grams Water
1 tbsp Soy Sauce
1 tsp unpacked Sugars, Brown
5 grams Blue Dragon Sweet Chilli Sauce
2 1tsp Oil, Sesame
1 serving Sunflower Oil
0.5 serving Blue Dragon Medium Wholewheat Quick Wok Noodles
1 oz Coriander
30 grams Spinach
20 grams Cashew Nuts
28 grams Chilli
10 grams Ginger
1 tbsp Fish Sauce

Recipe Directions for Thai chicken stir-fry with spicy peanut sauce

  1. Combine the peanut butter, water, soy sauce, sugar and a few red chilli flakes [not listed here] in a bowl.

  2. Toast the cashew nuts in a dry wok, remove and keep warm.

  3. Stir fry the chopped onion for 2mins, then add the ginger and garlic for another 1min.

  4. Add the chicken; stir fry for 5-6mins until the meat is sealed and mostly cooked through.

  5. Add the sliced carrots and mixed red and green peppers; stir fry for 2-3mins.

  6. Add the spinach and noodles (1/2 to 1 pack); stir fry for 1-2mins.

  7. Pour in the peanut butter mixture, sweet chilli sauce and fish sauce; stir fry for 2mins.

  8. Squeeze in lime juice from half a lime and give the stir-fry a final mix.

  9. Serve the stir-fry in a warmed bowl, drizzle over the sesame oil, and season with freshly ground black pepper.

  10. Garnish with the toasted cashew nuts and chopped coriander.
