Recipe Ingredients for Thai chicken in spicy peanut sauce

2 lbs chicken breast
1 medium onion
1 cup chicken broth
1/4 cup soy sauce
1 tbsp cumin
3 garlic cloves
1/2 tsp red pepper flakes
1/2 cup peanut butter
4 cups broccoli
1 large red bell pepper
1/2 cup cashews
1/4 cup cilantro
3 tbsp lemon juice
3 tbsp cornstarch

Recipe Directions for Thai chicken in spicy peanut sauce

  1. saute onion in a little olive oil

  2. add chicken; brown 5 min

  3. add broth and soy

  4. stir in cumin, garlic, red pepper flakes

  5. cook covered over low for 30 min

  6. remove 1 cup of cooking liquid and mix with 3 Tbsp cornstarch, peanut butterm 1 tbsp soy sauce and juice of one lemon. mix well then return to sauce pan and mix again

  7. cook 10 min, add bell pepper and broccoli, cook 5-10 min longer

  8. sprinkle with green onions, cilantro and peanuts or cashews before serving
