Low-calorie Thai chicken soup. Makes 2 small bowls or one big bowl.

Recipe Ingredients for Thai Chicken Soup

1 thigh, bone and skin removed Chicken, Thigh, Meat Only
1/4 tsp Culinary Spices Sea Salt
1 dash Pepper, Black
0.5 1tsp Vegetable Oil, Canola
2 small (5-1/2" long) Carrots
0.25 cup Soy Beans
1.5 cup Spinach
1 wedge yields Lemon Juice
2 medium (4-1/8" long) Onions, Spring Or Scallions
1 cup Coriander Leaves
1 serving Fish Sauce

Recipe Directions for Thai Chicken Soup

  1. Brown chicken in oil with salt and pepper.

  2. Add broth, a few galangal coins, a few kaffir lime leaves, (lemongrass, if you'd like), fish sauce (~1tsp), and lemon ring to pot. Bring to a boil.

  3. Add carrots (chopped in coins), stir, bring to a boil. Add frozen soybeans (no shell), spinach (chopped), bring to a boil. Let simmer 3 minutes.

  4. Add chopped cilantro & scallions. Turn off heat, let cool for a few minutes. Eat!
