A tasty chicken and rice soup with a thai flair.

Recipe Ingredients for Thai Chicken and Rice Soup

3 oz Chicken, Thigh, Meat Only
1/5 cup brown rice, cooked
3/4 cups broccoli slaw
3/4 cups chicken stock
1/4 cup coconut milk
1 tbsp lemongrass
1 tsp chili peppers
1 tsp fish sauce
1 tbsp grated ginger
1/2 tsp red curry paste
1/2 tsp Worcestershire sauce
2 tsp tomato paste
50 g Cilantro

Recipe Directions for Thai Chicken and Rice Soup

  1. Cook chicken and rice separately. I boil the thighs without the skin.

  2. Combine all ingredients and simmer until veggies are soft.
