A tasty peanut thai dish made in the slow cooker

Recipe Ingredients for Thai Chicken and rice

1 3/20 lbs boneless, skinless chicken breast
3/4 cup Mild Thick & Chunky Salsa
1/3 cup peanut butter
2 tbsp lemon juice
1 tbsp low sodium soy sauce
1 tsp ginger
1 cup uncooked white rice

Recipe Directions for Thai Chicken and rice

  1. in a bowl, mix salsa, peanut butter, lemon juice, soy sauce and ginger

  2. place chicken breast in the bottom of the slow cooker.

  3. pour salsa/peanut butter mix over chicken

  4. Turn on slow cooker on low for 6-8 hrs

  5. Cook rice like normal.

  6. Serve chicken over rice and put extra sauce.

  7. Garnish with peanuts and fresh cilantro if desired
