Lots of flavor but not spicy. Add a little of the lime zest for more intense lime flavor. Serve over rice.

Recipe Ingredients for Thai Chicken

1 kg chicken breasts, cubed, boneless, skinned
1 cup green beans, cut up
14 oz can coconut milk, stirred
1/2 onion, chopped
2 cloves garlic, minced
1/2 tsp ginger root, grated
1/4 tsp red pepper flakes
1 tbsp lime juice (juice from 1/2 lime)

Recipe Directions for Thai Chicken

  1. Saute onions, garlic, ginger and red pepper flakes in a little of the coconut milk.

  2. Add chicken, beans, lime juice and the rest of the coconut milk.

  3. Bring to a boil, then reduce heat and simmer, covered, for 20 minutes.
