Thai Chicken Soup with Rice Noodles

Recipe Ingredients for Thai Chicken Noodle Soup

3 oz Rice Noodles, Dry
6 cup Soup, stock, chicken, home-prepared
220 grams Chicken
2 carrot (7-1/2") Carrots
1 cup, chopped Cabbage
3 clove Garlic
1/4 cup Lemon Juice
1 cup, pieces or slices Mushrooms
1/2 tsp Pepper, Red Or Cayenne
1 tsp, crumbled Bay Leaf
2 cups water
5 grams ginger

Recipe Directions for Thai Chicken Noodle Soup

  1. Boil water and remove from heat. Add rice noodles and let sit for 3-4 min or until noodles are al dente. Drain and rinse.

  2. Boil chicken stock & add veggies and chicken. Boil on high for 1 min, then let simmer for 5-6 min.

  3. While continuing to simmer, add lemon juice, minced ginger, garlic, bay leaf and cayenne pepper.

  4. Add rice noodles and allow to heat up.

  5. Taste test and add salt& pepper as needed.

  6. Optionally add coconut milk for a creamier soup.
