Recipe Ingredients for Thai Chicken Lettuce Wraps

2 cups chicken breast, cut into 3/4? pieces
2 tablespoons peanut or canola oil
3 tablespoons soy sauce
3 tablespoons honey
2 teaspoons chili sauce
2 cloves garlic, minced
1/4 teaspoon ground ginger
4 scallions
8 ounces sliced water chestnuts, drained
1/4 cup peanuts
1 head of iceberg lettuce

Recipe Directions for Thai Chicken Lettuce Wraps

  1. INGREDIENTS

  2. 2 cups leftover cooked chicken breast, cut into 3/4? pieces

  3. 2 tablespoons peanut or canola oil

  4. 3 tablespoons soy sauce

  5. 3 tablespoons honey

  6. 2 teaspoons chili sauce

  7. 2 cloves garlic, minced

  8. 1/4 teaspoon ground ginger

  9. 1 bunch scallions, trimmed and sliced

  10. 1 can (8 ounces) sliced water chestnuts, drained

  11. 1/4 cup unsalted cashews, chopped

  12. Pepper, to taste

  13. 1 head of iceberg lettuce, leaves separated into individual cups

  14. INSTRUCTIONS

  15. Combine soy sauce, honey and chili sauce in a small dish and

  16. set aside.

  18. Heat oil over medium-high heat in a large skillet. Add chicken

  19. and season with pepper as desired, cook for approximately 3

  20. minutes, stirring occasionally.

  22. Lower to medium heat and add garlic, ginger and scallions,

  23. cooking and stirring for about 1 minute.

  24. 3.

  25. Stir in water chestnuts and half of your sauce mixture.

  26. Continue to cook until chicken is heated through.

  28. Remove from heat and sprinkle with chopped cashews. Spoon

  29. desired amount of the stir-fry mixture into the center of

  30. individual lettuce cups and drizzle with extra sauce. Simply

  31. hold filled lettuce cups like a taco to eat.

  33. Tip: If packing your Thai Chicken Lettuce Wraps for lunch, transport

  34. the stir-fry mix in a sealed container and lettuce cups in a

  35. medium-sized plastic zip-top bag.
