From biggest loser 30 day jump start program I used 1.25 tsp of low sodium chicken soup base instead of the chicken broth. Red curry powder is milder than the green curry powder, the green will give you some afterburn.

Recipe Ingredients for Thai chicken Curry

1 tsp olive oil
1 1/2 cup chopped onion
1 tsp ginger
1 tbsp chopped garlic
2 tsp curry powder
1 tsp coriander
1 tsp cumin
14 oz diced tomatoes, no salt added
1 cup unsweetened almond milk
1 cup low sodium chicken broth
1 tbsp lite soy sauce
1 1/2 cups cooked lentils
10 oz chicken breast

Recipe Directions for Thai chicken Curry

  1. Bake chicken in oven at 350. While chicken is cooking, make the curry sauce.

  2. Heat oil and saute onions about 4 minutes.

  3. Add ginger and garlic and cook until golden brown.

  4. Add curry powder, coriander and cumin and cook 1 minute.

  5. Add tomatoes, coconut milk, fish sauce and chicken flavoring. You can also add in the chicken at this point.

  6. Bring to a boil and stir in lentils. Remove from stove but keep warm.

  7. Spoon sauce over chicken, if you haven't already added the chicken.
