Thai Chicken Curry Recipe

My family loves this recipe! It's a colorful and healthy dish with chunks of chicken and vegetables in a rich creamy spicy curry sauce. It does not taste low fat but it is a GI recipe. Great served with basmati (or brown) rice and Asian salad

Recipe Ingredients for Thai Chicken Curry

2 tablespoons canola oil
4 teaspoons Thai curry paste
2 lbs. chicken breast
1 large onion, sliced
1 large red bell pepper, thinly sliced
1 large green bell pepper, thinly sliced
1 cup chicken broth
1 cup light sour cream
4 tablespoons Soy sauce
1/2 cup chopped fresh basil

Recipe Directions for Thai Chicken Curry

Heat oil in wok over medium high heat. Add curry paste and cook 30 seconds. Add chicken and stir-fry 5 minutes. Add onion and bell peppers and stir fry about 10 minutes. Add broth, sour cream, and soy sauce and simmer until chicken is no longer pink. Stir in basil and serve.
