Thai Chicken Basil Recipe

Delicious Thai Basil Chicken- traditional dish

Recipe Ingredients for Thai Chicken Basil

1 lbs of chicken breast
1 onion
2 cloves garlic
1 cup of scallions
1 cup of mushrooms
1 red chili pepper
1 red bell peppers
3 tbsp of cooking sherry
1 cup of Thai basil (or substitute sweet basil)

STIR-FRY SAUCE:
2 tbsp of hoisin sauce
1 tbsp of fish sauce
1 tbsp of brown sugar
2 tbsp of lime juice
2 tablespoons of peanut oil

Recipe Directions for Thai Chicken Basil

  1. Combine the stir-fry sauce ingredients together in a cup, stirring to dissolve the sugar. Set aside.

  2. Chop all vegetables and chicken into 1 inch or bite sizes/

  3. Heat a wok or large frying pan over medium-high heat. Add 2-3 Tbsp. oil and swirl around, then add the onion, shallot, scallions, garlic, chili pepper (serrano or Vietnamese) and mushrooms (white button or shitake). Stir-fry 1-2 minutes.

  4. Add the chicken and continue stir-frying 3-4 minutes, or until chicken is no longer pink. When the wok/pan becomes dry, add 1-2 Tbsp. of the sherry/wine.

  5. Next, add the bell pepper and another Tbsp. of sherry/wine if pan becomes too dry. Stir-fry for 1 minute.

  6. Reduce heat to medium-low and add the stir-fry sauce. Stir and let the dish simmer.

  7. For more sauce with add 1/4 cup of chicken stock and 1 tablespoon of lime juice. Stir and let simmer.

  8. Next, slice into thin shreds (you can also stack the leaves on top of each another, then roll them up and thinly slice).

  9. Reduce heat to minimum and add the prepared basil, gently folding it into the dish. Salt and pepper and add more lime juice if too salty,

  10. or more fish sauce if not salty enough.

  11. Serve with steamed rice. Add a handful of roasted cashews if looking for some crunch.
