A version of chicken basil that I cooked up myself

Recipe Ingredients for Thai chicken basil

1 chicken breast
1 1/2 tbsp soy sauce
1 tsp ginger
1/4 tsp black pepper
1 red bell pepper
1 medium onion
1 cup spinach
1/2 cup basil
2 tbsp peanut oil
4 cloves garlic
2 tbsp honey
2 tbsp fish sauce
1 1/2 tsp chili paste
1 1/2 tbsp rice wine vinegar
1 tbsp water
1 cup brown rice, uncooked

Recipe Directions for Thai chicken basil

  1. 1 hour prior to cooking, marinate cubed chicken breast in soy sauce, grated ginger and black pepper. Set aside.

  2. Prepare brown rice as directed about 40-30 minutes before dinner time.

  3. Slice bell pepper and onion into uniform slices. Wash spinach and basil. Refrain from slicing basil until right before adding to pan.

  4. Heat peanut oil over medium heat. Add pepper and onion. After about 3 minutes, add garlic, stirring as to avoid burning or browning garlic.

  5. Meanwhile, prepare sauce by combining remaining ingredients.

  6. Once onion is translucent, move vegetables to side of the pan and increase heat to medium high. Drain chicken of excess marinade and add to pan, distributing to one even layer.

  7. After about 30 seconds, flip chicken. Mix with vegetables after another 30 seconds.

  8. Add spinach and basil to pan. Then add sauce. Stir through and cook until sauce boils (about 2-3 minutes).

  9. Serve over brown rice.
