Recipe Ingredients for Thai Cashew Chicken

0.5 tbsp Vegetable Oil, Canola
0.5 medium (2-1/2" dia) Onions
0.5 medium Yellow Hothouse Bell Pepper
0.5 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 cup, diced Celery
3.104 oz Broccoli
4 oz Portobello Mushrooms
1.5 tbsp Ketchup
1 tbsp Oyster Sauce
1 serving Chicken Broth
0.5 tsp Sugars, Granulated
1 oz Cashew Nuts
10 oz Fresh Boneless Skinless Chicken Thigh Cutlets
3 oz Carrots, Baby

Recipe Directions for Thai Cashew Chicken

  1. Chop all vegetables into medium chunks.

  2. Heat oil in skillet over medium heat; cook the onion, peppers and carrots until tender.

  3. Mix in the ketchup, oyster sauce, soy sauce, broth, sugar and chili paste.

  4. Add the chicken, broccoli and mushrooms; cook and stir 10 min. until the vegetables and tender and chicken juices run clear.

  5. Mix in the cashews just before serving.
