Thai carrot soup with light coconut milk, and red curry paste Make sure to use TWO cans of un-drained no salt added diced carrots (which i could not find on the food list)

Recipe Ingredients for Thai Carrot Soup

4 Carrots
1/2 cup Light coconut milk
1/2 onion chopped
1 tbsp Curry powder
1/2 tbsp coriander
1 tbsp Extra Virgin Olive Oil
2 tbsp grated ginger
1 tbsp minced garlic

Recipe Directions for Thai Carrot Soup

  1. Preheat medium pot over medium high heat. Add olive oil, and onions, saute for 3 mins.

  2. Add garlic and ginger, saute for 2 mins.

  3. Add 2 cans no salt, undrained carrots, coconut milk, curry and coriander.

  4. Bring to a boil, then simmer for about 5 mins. Puree in batched until the soap is smooth.

  5. Serves 6 (1 cup servings)
