Thai style salad with beef. Preparation time: 20 minutes Cooking time: 10 minutes

Recipe Ingredients for Thai Beef Salad

500 g Beef
60 g bean thread noodles
1 lebanese cucumber (130g), seeded, sliced thinly
100 g cherry tomatoes, quartered
150 g red capsicum, sliced thinly
3 green onions, sliced thinly
1/3 cup Coriander
1/3 cup Mint Leaves
1/4 cup (60ml) lemon juice
1 tbsp fish sauce
1 tbsp brown sugar
1 tbsp vegetable oil

Recipe Directions for Thai Beef Salad

  1. Cook beef in heated oiled large frying pan until browned both sides and cooked as desired. Cover; stand 10 minutes, then slice beef thinly.

  2. Meanwhile, place noodles in large heatproof bowl, cover with boiling water, stand until just tender; drain into colander. Using kitchen scissors, cut noodles into random lengths.

  3. Make thai dressing: place lemon juice, fish sauce, brown sugar and vegetable oil in screw-top jar; shake well

  4. Return noodles to same cleaned bowl with remaining ingredients and dressing; toss gently to combine.
