Recipe Ingredients for Thai Beef Basil w/Coconut Rice

1 1/4 c jasmine rice
13 oz Lite Coconut Milk
3 chili peppers
1 jalapeno pepper
4 T garlic cloves, chopped
2 3/10 T fish sauce
2 3/10 T lite soy sauce
1 t sugar
1 T vegetable oil
19/20 lb. 90% lean ground beef, fresh
2 oz basil leaves
2 medium tomatoes, chopped
1 t crushed red pepper

Recipe Directions for Thai Beef Basil w/Coconut Rice

  1. Prepare rice first

  2. Add a can of light coconut milk, 3/4cup water and .5t of salt to 1.25c jasmine rice

  3. Bring to a boil, then simmer on low for 25minutes

  4. Take off burner and fluff with a fork when ready to serve

  5. While rice is cooking

  6. Heat up wok and add 1T oil

  7. Add chopped garlic and half of the peppers to the wok

  8. Cook for 30 seconds

  9. Add ground beef, break up with wooden spoon and cook 5 minutes or until finished

  10. Combine fish sauce, soy sauce and sugar in a small bowl

  11. Add to wok when meat is cooked through

  12. Add the other half of the peppers to the mixture

  13. Add the chopped tomatoes and torn basil and allow to heat through, just until the basil wilts

  14. Sprinkle with crushed red pepper

  15. Serve Thai beef basil over coconut rice and garnish with lime slices if desired.
