Recipe Ingredients for Textured Tofu

1 block Tofu, Firm
2 tbsp low sodium Soy Sauce
1/2 tsp Italian Herb Seasoning Grinder

Recipe Directions for Textured Tofu

  1. Remove tofu from package and wrap in a cloth or paper towel. Set on a dish and place a weight on top. (another plate or a chopping board with a can of beans or something on top is good)

  2. After about 30 mins remove tofu from cloth and place in a freezer safe container. Freeze overnight or longer, until ready to use.

  3. Take frozen tofu out of the freezer and thaw. To speed the process I like to put it in the microwave. If you want to use the microwave, heat it for 2 minutes, being careful with the hot plate, angle it over the side of the sink and press water out of the tofu using a meat tenderizer or potato masher, anything handy really. Repeat on the other side, 2 mins heat, then drain.

  4. Cover drained tofu with cloth or paper towel and weigh it down again. Leave it to drain for 10-20 minutes or longer if desired.

  5. Once it is pretty dry, crumble the tofu into a nonstick pan. If you need to, use just a bit of Pam or olive oil. Around a teaspoon or less. You can crumble the tofu in the pan by breaking it up, or I like to mash it up on the plate first a bit with the potato masher.

  6. Once it starts to cook, add the soy sauce and Italian herbs or other seasonings, fresh or dry, you might like. Also, you can add veggies too if you like, such as onions or bell peppers.

  7. Cook until golden brown. Add more ingredients to taste. I put down that this makes 6 servings because I was using it in a recipe that has six servings. So if you were to mix this in with fried rice or something like that, it would be 6 servings. On it's own, you can adjust it to however many servings is appropriate for your dietary needs.
