These sandwiches are reminiscent of the Sloppy Joes many of us enjoyed as kids. I've updated our moms' version by using lower fat ground turkey, adding some healthy veggies to the sauce, and serving them on whole grain rolls. The finer you dice the carrots and peppers, the less likely your kids will be able to detect them. Serve them with a Waldorf Salad.

Recipe Ingredients for Texas Hero (a.k.a. The Davey Crockett)

1 lbs. ground turkey,
1 yellow onion, finely diced
1 stalks celery, finely diced
1 carrot, finely diced
1 oz. tomato sauce
1 tbsp. brown sugar
1 tbsp. Worcestershire sauce
1 oz. canned kidney beans, drained and rinsed
1 tbsp. ketchup
1 whole wheat roll

Recipe Directions for Texas Hero (a.k.a. The Davey Crockett)

  1. In a large skillet over medium heat, brown the meat in its own juices until it is almost cooked through. (If you are using vegetarian ground "meat" or an extra can of beans, add it after the tomato sauce instead).

  2. Drain off the excess liquid, if necessary, and add the diced vegetables to the skillet.

  3. Sauté the mixture for 2 more minutes and add all the remaining ingredients, except the buns and optional hot pepper sauce. Bring it to a boil, reduce the heat, cover the skillet, and simmer it for about 15 minutes until the vegetables are tender. (Meanwhile, make the salad, if you are serving it.) At this point you can refrigerate the meal for up to 2 days, freeze it for up to 3 months, or proceed to the next step.

  4. To serve the sandwiches, toast the buns lightly and fill each one with a large spoonful of the meat mixture. Sprinkle the filling with a few dashes of hot pepper sauce, if desired.
