Recipe Ingredients for Texas Cobb Salad

16 oz Fresh Boneless Skinless Chicken Breasts
1 tsp Pepper, Black
1 tsp Paprika
2 tsp Cilantro
1/2 cup Lime Juice
1/4 cup Olive Oil
3 serving Turkey Bacon
6 cup,+shredded+or+chopped Lettuce
6 cups Romaine Lettuce
16 oz Grape Tomatoes
2 medium Avocado
1/2 small raw Red Onion
2 cup, chopped Broccoli
5 oz Queso Fresco
2 oz. light mayo
2 tsp Yellow Mustard
1 1/2 tbsp. honey
1/2 cup white wine

Recipe Directions for Texas Cobb Salad

  1. Rinse chicken under cold water and trim any excess fat. Place seasoned chicken in a quart size storage or freezer bag. Mix cup lime juice, cilantro, olive oil, salt, black pepper, and paprika together and pour over chicken. For spicier chicken, add more cilantro. For smokier chicken, add more paprika. Seal the bag very well eliminating as much air as possible from the bag. Mix marinade and chicken in the bag by squeezing the chicken in the bag. Refrigerate for 30 minutes to an hour.

  2. Cook bacon on medium heat until done. Drain cooked bacon on a paper towel and chop once the bacon has become cool to the touch. Place chopped bacon in the refrigerator until you are ready to build your salad. On a grill pan on the stove or on the grill, cook marinated chicken until the internal temperature reaches 165 degrees. Let the chicken cool to the touch and dice to bite sized portions. Set aside.

  3. Toss romaine and iceberg lettuces together. Spread the lettuce in the bottom of a serving bowl, preferably square or rectangle for portioning. Place chicken in a row down the middle of the bed of lettuce. Place bacon next to chicken in a row. Place queso fresco next to bacon in another row. Row the red onions next to the queso fresco. On the other side of the chicken, make rows of avocado, tomatoes, and broccoli in that order. Once finished, the top of your salad should be rows of toppings from one end of your serving bowl to the other.

  4. Whisk together yogurt, honey, mustard, and remaining lime juice. Serve on the side of Texas Cobb Salad. Nutritional counts are already added in. Tip: spray your tablespoon with nonstick spray before measuring honey to get all of the honey you deserve in your recipe!
