Splenda has been substituted for sugar that was in the original recipe. You could also use stevia or some other sweetener.

Recipe Ingredients for Texas Caviar

15 oz Black Beans
15 oz Pinto Beans
15 oz Blackeye Peas
15.25 oz White Corn
8 oz Pimientos
1 medium raw Bell Pepper Red
1 medium Yellow Hothouse Bell Pepper
0.5 cup, chopped Onions, Spring Or Scallions
1 pepper Peppers, Jalapeno
1.5 cup, diced Celery
0.5 cup Vegetable Oil, Canola
0.5 cup Vinegar red wine
24 tsp Sweetener
0.5 tsp Salt, Table

Recipe Directions for Texas Caviar

Drain all the cans and jars in a colander then transfer to a large bowl. Chop seeded peppers, green onions, and celery fairly fine and add to the bowl. Mix dressing ingredients (canola oil, vinegar, Splenda, salt & pepper), whisk together and transfer to bowl. Mix well and refrigerate. Keep mixing every now and then. Keeps fairly long time in refrigerator. Serve with the chip of your choice or just eat it out of a bowl. I also use it to garnish a lettuce salad. Yum!
