Simple salsa style appetizer to enjoy during football games.

Recipe Ingredients for Texas Caviar

15 1/2 oz Black-eyed peas, drained
15 1/4 oz Black Beans, drained
22 oz Shoe Peg Corn , drained
10 oz Diced Original Tomatoes and Green Chilies, Rotel hot
1 Bell Pepper, minced
1 Yellow Onion, minced (Vidalia preferred)
5 Green Onions, chopped (Scallions)
8 oz Fat Free Italian Dressing
6 Roma Tomatoes, chopped

Recipe Directions for Texas Caviar

  1. Combine all ingredients as listed, refrigerate for 12 hours. Drain 1/2 liquid.

  2. Drain every 2 hours after that. Keep refrigerated.

  3. Serve with Frito Scoops or White Corn Tostitos.
