Texas Caviar Recipe

Makes 20 servings



3/4 cup vegetable oil 1/2 cup sugar 1/2 cup cider vinegar Place in sauce pan and bring to a boil. Allow mixture to cool. Meanwhile........ Dice the following and place in large bowl: 1 yellow pepper, 1 red pepper, 1 green pepper, 1 orange pepper, 1 jalapeno pepper and 1/2 of a red onion. Add 2 TBLS of finely diced garlic (the stuff in the a jar from the supermarket is fine. Rinse and drain one can of black beans; add to bowl. Add 1-1/2 cups frozen white shoepeg corn and 1-1/2 cups frozen yellow corn. Pour slightly cooled oil mixture over veggies. Add salt and pepper to taste. Mix. Marinate for at least a couple of hours to blend all flavors.
