A family favorite that's easy and nutritious.

Recipe Ingredients for Texas Beef Skillet

1 lb lean ground beef
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup rice
15 oz red kidney beans, drained and rinsed (1 can)
15 oz chopped tomato (1 can)
1 tbsp chili powder
1 tsp cumin
1/2 tsp salt
1/4 tsp pepper
1 garlic to taste
1 1/2 cups shredded cheddar cheese

Recipe Directions for Texas Beef Skillet

Cook ground beef and onion in medium to large skillet until meet is browned through. Add all remaining ingredients except cheese. Simmer covered over low heat until rice is tender (about 20 minutes). Top with cheddar cheese and cover again until cheese is melted (or put under the broiler for a few minutes to melt and brown a little). Serve with tortilla chips.
