Variation on a different recipe I saw on this cite, just less cheese and homemade salsa.

Recipe Ingredients for tex mex zucchini cass

2 cup, sliced Squash, Summer, Crookneck And Straightneck
7 cup, sliced Squash, Summer, Zucchini, Includes Skin
6 oz Green Chillies
5 pepper Peppers, Jalapeno
4 slice (1 oz) Cheddar Cheese
25 oz Pico de Gallo Salsa Fresh Salsa
2 leek Leeks, (Bulb And Lower Leaf-portion)

Recipe Directions for tex mex zucchini cass

  1. Pre heat overn to 400, grease 9x13 pan.

  2. Cut up all of the peppers, onions and summer squash, and all but one of the jalapenos. Mix together with a dash of pepper and some garlic, if you like.

  3. Bake, covered, for 40 minutes. In the mean time make pico de gallo by combining canned cut up tomatos with sauce, cut up onions, cut cilantro and last of the jalopenos.

  4. Put cheese on top of casserole, then spread pico over that, bake covered for another half hour.

  5. Serve.
