Recipe Ingredients for Tex-Mex Tomato Soup

1 1/2 cup carrots, chopped (about 3 carrots)
1 1/2 cup celery, chopped (about 3-4 ribs)
1 red bell pepper, chopped (about 1 cup)
1 tablespoon olive oil
1 medium onion, chopped (about 1 cup)
1/4 teaspoon salt
28 oz can diced tomatoes
2 cups water
15 oz. can black beans, rinsed & drained
1/2 cup cilantro (or parsley, or celery) leaves
2 tablespoons pickapeppa sauce (or chipotle)
1/4 cup fat free sour cream

Recipe Directions for Tex-Mex Tomato Soup

  1. Place carrots, celery, and red bell pepper in small microwavable container. Add 1/4cup water, cover top of bowl loosely w/ plastic wrap, and microwave on high 5 min. or until veggies are just tender.

  2. Heat oil in stockpot over medium heat. Add onion and saute until translucent, about 5 min. Add steamed veggies and season with salt. Saute an additional 5 min. or until veggies are slightly caramelized.

  3. Add tomatoes (w/ juice) and water. Add beans, cilantro, & pickapeppa or chipotle sauce. Stir to blend, bring to a simmer, reduce heat to low, and cook 25 to 30 min.

  4. Serve with a spoonful of fat free sour cream on top. Can also add some stripped corn tortilla and a squeeze of lime if desired.
