Recipe Ingredients for Tex Mex Rotini Salad

8 oz whole wheat rotini
1/4 cup fresh lemon juice
1 garlic clove, minced
1/3 cup Extra Virgin Olive Oil
15 oz can Black Beans, drained and rinsed
2 tbs fresh cilantro
1/3 cup onion, chopped
1/2 cup red bell pepper, chopped
2/3 cup Corn, Sweet, Yellow
1 1/2 tsp Chili Powder
1/2 tsp black pepper
3/4 cup grape tomatoes,

Recipe Directions for Tex Mex Rotini Salad

Cook pasta to al dente, drain and set aside. In a small bowl wisk together the lemon juice and garlic and pepper. In a large bowl, combine drained pasta with all other ingredients except dressing and toss gently. Pour dressing over pasta mixture and toss thoroughly. Refrigerate in an airtight container for at least 1-4 hours. Serve chilled. Refrigerate leftovers.
