Recipe Ingredients for Tex Mex Noodles

150 grams lentils
3 c. water
1 tbsp. olive oil
1 medium yellow onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
3 tbsp. chili powder
3 tbsp. maple syrup
1 tbsp. prepared yellow mustard
4 oz diced green chilis, drained
8 oz. Tofu Shirataki
2 c. chopped tomatoes
1/2 c. salsa
1 c. plain almond milk
1 tsp. vinegar
2 tbsp. chili powder
1 tsp. salt

Recipe Directions for Tex Mex Noodles

  1. Rinse lentils and remove any debris. Boil water over high heat. Add lentils and continue boiling for 2 - 3 minutes. Lower heat and simmer 20 - 25 minutes until softened. Drain and set aside.

  2. Preheat a skillet over medium-heat. Add onions and peppers and cook until the onions are translucent - about 7 minutes. Add garlic and saute 2 minutes. Add cooked lentils, green chilis, shirataki, tomatoes, salsa, almond milk, vinegar, chili powder, and salt and stir thoroughly to make sure everything is moistened.

  3. Bring to a boil, cover, reduce heat to low, and cook for 20 minutes. Add maple syrup and mustard, and cook for an additional 5 minutes. Stir before serving.
