Recipe Ingredients for Tex-Mex Macaroni and Cheese

1 1/2 cup macaroni
5 oz fat free evaporated milk
12 oz butternut squash
1 cup reduced fat cheddar cheese
1 cup tomatoes
4 oz green chilies
1/2 cup onion
1 teaspoon kosher salt
2 teaspoon crushed red pepper
1/4 cup bread crumbs

Recipe Directions for Tex-Mex Macaroni and Cheese

  1. Cook macaroni

  2. Cut squash into 3-4 inch pieces

  3. Nuke squash in microwave

  4. Cut off skin on squash

  5. Mash squash and put in processor with evaporated milk

  6. Put mixture into large pot on low heat until it gently simmers

  7. Add cheese, diced tomatoes, and green chilies drained

  8. Add onion, salt and red pepper

  9. Stir in macaroni

  10. Put mixture in pyrex dish

  11. Sprinkle on bread crumbs

  12. Cook at 350 for 30 min

  13. Allow to sit for 5 min-10min before serving
