Recipe Ingredients for Tex-Mex Cornbread Muffins

159 grams Yellow Corn Meal
159 grams Gluten Free Flour
2 packet SPLENDA No Calorie
1 tsp Baking Powder
1 cup(245 g) Milk, Nonfat, Fluid
1 serving Kirkland Real Egg Product (1/4 cup liquid eggs)
81 grams Applesauce
1 tsp Chili Powder
3 serving Kroger - Lean Ground beef 93%/7%
283 grams Mild Diced Tomatoes and Green Chilies

Recipe Directions for Tex-Mex Cornbread Muffins

  1. PREHEAT oven to 400F. Grease muffin pan.

  2. COMBINE meal, flour, sugar, baking powder and salt in medium bowl. Combine milk, applesauce and egg in small bowl; mix well. Add milk mixture to flour mixture; stir just until blended. Pour into prepared pan.

  3. BROWN ground beef, then add spices to taste along with Rotel Diced Tomatoes & Green Chiles. Let simmer for about 10 minutes for flavors to meld.

  4. SLOWLY fold in meat mixture to cornmeal. Then add to muffin tins, roughly about 3 tablespoons per cup.

  5. BAKE for 25-30 minutes, or until wooden pick inserted in center comes out clean.
