I reduced the amount of beans to 1/2 cup and increased the corn to 2 cups.

Recipe Ingredients for Tex Mex Bean Salad with Creamy Dressing

1/3 cup salsa
3 tbsp reduced-fat sour cream
1 tbsp apple cider vinegar
3 cups canned black beans, drained and rinsed
1 cup grape tomatoes, halved
3/4 cup corn kernels
1/2 cup avocado, diced
1/2 cup scallions, sliced
1/2 cup cilantro, fresh, chopped
2 oz Pepper Jack cheese, shredded

Recipe Directions for Tex Mex Bean Salad with Creamy Dressing

  1. In a large bowl, stir together salsa, sour cream and vinegar until blended. Add beans, tomatoes, corn, avocado, cheese, scallions and cilantro; toss to mix and coat.

  2. Suggested by WW to serve over romaine lettuce with baked corn chips on the side. I served it just as is.
