Recipe Ingredients for Tex-Mex Bean Salad with Creamy Dressing

1/2 cup salsa
6 tbsp light sour cream
1 1/4 tbsp apple cider vinegar
19 oz black beans , drained and rinsed
19 oz white kidney beans , drained and rinsed
1 1/4 cup yellow corn
1 avocado, diced
4 scallion(s), sliced
1/2 cup cilantro, fresh, chopped,
2 1/2 oz cheddar cheese , cubed or shredded

Recipe Directions for Tex-Mex Bean Salad with Creamy Dressing

  1. In a large bowl, stir together salsa, sour cream and vinegar until blended.

  2. Add beans, tomatoes, corn, avocado, scallions and cilantro.

  3. Toss to mix and coat.

  4. Place 1 1/2 cups of lettuce on each of 4 serving plates.

  5. Top each with 1 1/2 cups of bean mixture.

  6. Sprinkle each serving with 2 tablespoons of cheese.

  7. Serve with corn chips if so desired.
