Recipe Ingredients for Terry's Vegetable Soup

15 oz Natural Foods - Organic Tomato Sauce
15 oz Natural Foods - Organic Diced Tomatoes
3 medium(61 g) Carrots
2 cup, diced Celery
1.5 cup, chopped(160 g) Onions
2 cup(200 g) Sweetpotato
6 cup, chopped Kale
3 serving Organic Brown Rice Pasta Spirals
1 tsp Thyme, Fresh

Recipe Directions for Terry's Vegetable Soup

  1. Lightly spray the bottom of a large soup pot with olive oil.

  2. Saute the onion, carrots and celery until onion is tender.

  3. Add sweet potato and canned diced and sauced tomatoes.

  4. Add 6 cups of water and fresh spices. Add a dry bay leaf as well as a salt substitute of your choice. I use an organic seasoning mix that is saltless.

  5. Bring soup to a simmer and cook until vegetables are all tender.

  6. Add pasta and kale and return to boil. Cook until pasta and kale are tender but not overcooked.

  7. Serve with a dollop of sour cream or a sprinkle of parmesan cheese and fresh bread or crackers.
