This is a great pasta sauce. It is wonderful over spaghetti squash as well as potatoes or even over broccoli or brussel sprouts.

Recipe Ingredients for Terry's Turkey Meat Sauce

20 oz ground turkey
8 oz mushrooms
1 large red onion
1 tbsp garlic
2 carrots
1 tbsp oregano
2 tbsp sweet basil
1 tbsp thyme
1 tbsp fennel seeds
6 oz tomato paste
30 oz diced tomatoes
30 oz tomato sauce
1 Salt
1 Pepper

Recipe Directions for Terry's Turkey Meat Sauce

  1. Spray a light coating of olive oil in a large heated pot.

  2. Over medium heat saute the onion and mushrooms that have been chopped.

  3. Grate the carrots and mince the garlic. Add the carrots, garlic and turkey together. Cook over medium heat until the meat is cooked through and broken up and the onions are tender.

  4. Add ground oregano, fresh or dried sweet basil, dried thyme and freshly ground fennel seeds. Allow the spices to heat and release their aroma.

  5. Add the canned tomato paste, sauce and diced. Stir them in with salt and pepper to taste.

  6. Simmer over medium to low heat stirring periodically to prevent sticking or scorching for 1 hour.

  7. Serve over your favorite pasta or vegetables.
