This sauce is flavorful and filling. The recipe makes eight servings and is delicious over brown rice pasta, For more fiber and better nutrition serve it over spaghetti squash.

Recipe Ingredients for Terry's Turkey Meat Sauce

20 oz ground turkey
8 oz mushrooms
1 large red onion
1 tbsp garlic
2 carrots
1 tbsp oregano
2 tbsp sweet basil
1 tbsp thyme
1 tbsp fennel seeds
6 oz tomato paste
30 oz diced tomatoes
30 oz tomato sauce
1 Salt
1 Pepper

Recipe Directions for Terry's Turkey Meat Sauce

  1. Heat a large pot over medium heat. Spray the bottom of the pot with a light coating of olive oil.

  2. Chop the onion and mushrooms and saute. Add the garlic minced and the carrots grated to the pot. When the mushrooms are browned and the onion is tender add the ground turkey.

  3. When the turkey has cooked through though not browned add the spices. I use ground oregano, chopped fresh sweet basil or dried if not in season, dried thyme and freshly ground fennel seeds. Allow the spices to heat and begin to release their aromatics.

  4. Add the canned tomatoes, sauce and paste. Stir them in well and add salt and pepper to taste.

  5. Simmer the pot for 1 hour over medium low heat, stirring regularly to prevent sticking or scorching.

  6. Serve hot over pasta, spaghetti squash, baked potato etc.
