Wonderfully interesting dressing that can be spiced up or down in heat level makes this cold noodles salad company fare! Vegan, oil free, refined sugar free and gluten free

Recipe Ingredients for Terry's Thai Noodle Salad

10 oz Organic Brown Rice Pasta
3 carrot (7-1/2") Carrots
10 oz Broccoli, Flower Clusters
1 medium raw(119 g) Bell Pepper Red
6 oz(85 g) Organic Kales
2 tsp Ginger Root
3 cloves Garlic
8 tbsp(34 g) Organic Almond Butter (Roasted/Creamy)
10 dates Dates
4 oz Juice
0.25 cup Soy Sauce
0.25 pepper Peppers, Hot Chili, Red

Recipe Directions for Terry's Thai Noodle Salad

  1. Start a large pot of water boiling for the noodles. I had brown rice spaghetti but brown rice fettucini would be ideal. Cook the noodles according to package instructions. Drain and run under cold water while you prepare the rest.

  2. Steam the broccoli florets and the baby kale just lightly to brighten the colors and soften the flavors. When to desired doneness put the veggies under cold water to stop the cooking and cool for the salad.

  3. Grate the carrots and chop the bell pepper. Place in a large serving bowl to be mixed with the other veggies and the noodles when they are done.

  4. Put the remaining ingredients along with 1/2 water, into a blender and blend until creamy smooth and pourable as dressing. Add more water if needed to thin.

  5. Pour enough dressing to coat noodles and veggies in bowl and mix well.

  6. Serve cold.

  7. You can add more red pepper flakes or less according to taste preferences. I used low-sodium gluten free Tamari instead of the soy sauce but this soy sauce was the only database listing that fit the nutrients on my bottle.
