Vegan, no oil, potato and veggie curry.

Recipe Ingredients for Terry's Potato Curry

3 medium Carrots
1.5 cup, diced Celery
4 ounce(28 g) Mushrooms, Portabella
1 cup, chopped(160 g) Onions
224 grams Chard, Swiss
32 oz Yukon Gold Potatoes
2 cup(240 g) Organic Vegetable Broth
4 dates Dates
1 tsp Curry Powder
3 cloves Garlic

Recipe Directions for Terry's Potato Curry

  1. Saute onions and mushrooms in 1/4 cup of vegetable broth. Add sliced carrots, chopped stems of chard(reserve greens of chard for later addition) and chopped celery. saute until onions begin to soften.

  2. Add potatoes, dates chopped and spices. Stir regularly to coat all in spices. Add more broth as needed to avoid sticking to skillet.

  3. When potatoes and carrots are tender add chopped chard leaves and bell pepper stirring to mix until chard is tender and bell pepper is warmed.

  4. Serve over rice, lentils or plain. Garnish with peanuts if you like or some cilantro or both.
