I actually used a 15.5 oz can of delmonte fresh cut golden sweet whole kernal corn. I put in 10 oz so the nutriotion info would match Delmonte nutrition information. As it is 60 calories per 1/2 cup x 3.5 servings comes to 210 calories for the whole can. Calorie kept coming up with over 300 calories per can.

Recipe Ingredients for Terrys black bean and corn salad

15 1/2 ounce can black beans
10 ounce can corn
1 cup cilantro
1/8 cup lime juice
1/2 cup red onion, chopped
2 cloves garlic, chopped
1 green onion, mince
1 tsp salt
1 tsp pepper
1/4 tsp cumin
1/4 tsp garlic salt

Recipe Directions for Terrys black bean and corn salad

  1. one can of goya black beans (blue label) rinse thoroughly and drain.

  2. drain corn

  3. chop 1/4 cup to 1 cup of cilantrol. I really like it so I use a lot

  4. minced two cloves garlic

  5. chop red onion

  6. mince 1 green onion (scallion)

  7. I used the juice of one small fresh lemon and a little squirt of the lime shaped store bought kind.

  8. mix all ingredients in a glass bowl

  9. add salt, pepper, garlic salt and cumin to taste.

  10. cover and refrigerate for at least an hour so flavors meld. ENJOY!
